Ingredients:

  • 1 cauliflower, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, grated
  • 1/4 cup butter
  • 1/2 cup cheddar cheese, shredded

  • 1/2 teaspoon crushed black pepper
  • 2 cups water or vegetable stock
  • 2 cups milk
  • 1 teaspoon red chili sauce
  • 1 tablespoon cornflour

Preparation Time: 10 minutes

Instructions:

  1. Cook the Vegetables:
    In a saucepan, add water (or vegetable stock), cauliflower, celery, and grated carrot. Sprinkle some salt and cook until the vegetables are tender.

  2. Prepare the Soup Base:
    In a separate pan, melt butter over medium heat. Add cornflour and stir continuously. Slowly pour in the milk, whisking to avoid lumps. Cook until the mixture thickens.

  3. Add Seasoning and Chili Sauce:
    Once the soup base has thickened, add red chili sauce and mix well. Turn off the heat.

  4. Combine:
    Add the cooked vegetable mixture (including the liquid) into the soup base. Mix thoroughly.

  5. Finish with Cheese and Seasoning:
    Add shredded cheddar cheese, crushed black pepper, and additional salt, if needed. Stir until the cheese melts and everything is well combined.

  6. Serve Hot:
    Serve the creamy cauliflower soup hot with your favorite sandwich or as a standalone dish.
