Instructions:

  1. Prepare Crumb Mixture:

    • In a large mixing bowl, combine the all-purpose flour, quick-cooking oats, and brown sugar.
    • Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
    • Gently stir in the white chocolate chips.
    • Set aside 2 1/2 cups of the crumb mixture for later use.
  2. Prepare Crust:

    • Flour your hands and press the remaining crumb mixture into a greased 13×9 inch baking pan, forming an even crust.
  3. Prepare Cheesecake Layer:

    • In another mixing bowl, beat the softened cream cheese until creamy.
    • Add the sweetened condensed milk, lemon juice, and vanilla extract; stir until smooth and well combined.
  4. Assemble Bars:
