Cranberry-Orange Bread Recipe

Description:

Nice for the holidays. Fall is a great time to make nut breads, they freeze well, and make excellent hostess gifts.

Ingredients:

Quantity Ingredient
1 Orange zest
1/2 All-purpose flour
2 1/2 Sugar
1 Baking powder
2 Baking soda
1/2 Salt
1/2 Eggs
2 Butter (melted)
4 Fresh cranberries
2 Frozen cranberries
1 Walnuts

Instructions:

  1. Preheat oven to 375Β°F.
  2. Grease a 9×5-inch loaf pan and have it ready.
  3. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  4. In another small bowl, lightly beat eggs, then stir in melted butter, orange peel, and orange juice.
  5. Add the wet mixture to the flour mix, and stir until the batter is just mixed.
  6. Fold in the cranberries and walnuts (batter will be stiff).
  7. Pour the batter into the loaf pan and bake for 55-60 minutes or until a toothpick inserted in the middle comes out fairly clean.
  8. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and finish cooling on the wire rack.
