Instructions:

To make the stuffing, melt butter in a skillet over medium heat and sauté the onion, celery, and carrots for about 5 minutes or until the onion turns translucent.

Add the stock and seasonings to the skillet, then remove it from the heat. Mix in the bread cubes and allow the mixture to cool slightly.

For the glaze, combine all the glaze ingredients in a medium-sized bowl. Set aside 1/2 cup of the glaze to serve cold with the meal.

Preheat the oven to 325°F (165°C) and lightly grease a baking dish or a small roasting pan.

Place the turkey breast on a cutting board. Hold a knife parallel to the board and slice the meat through the middle, leaving the last inch intact.

Open the meat like a book and cover it with plastic wrap. Pound the meat with a meat mallet to an even thickness.

Cover one side of the meat with the prepared stuffing.

Fold the other side over and secure it with toothpicks along the edges.

Transfer the stuffed turkey breast to the prepared baking dish and pour the remaining cranberry glaze over the top.

Bake the stuffed turkey breast, uncovered, for 60 to 90 minutes, or until it’s cooked through and the juices run clear.

Let the stuffed turkey breast rest for 5 minutes before slicing and serving.
