Ingredients:

  • 1 boneless, skinless chicken breast
  • 1/2 cup flour
  • 1 tablespoon butter
  • 1 tablespoon lite olive oil
  • 1/4 cup white wine
  • 2/3 cup chicken broth
  • 2/3 cup Dijon mustard
  • 3 tablespoons cornstarch
  • 1 1/2 cups water
  • 1 1/2 cups craisins
  • 1/2 cup chopped green onion tops

Instructions:

  1. Begin by slicing the chicken breasts lengthwise into 1-inch strips.
  2. Lightly coat the chicken pieces with flour, then sprinkle them lightly with salt and pepper.
  3. In a large frying pan, heat the butter and olive oil over medium heat.
  4. Add the chicken strips to the pan and cook for about 2 minutes on each side, until they are golden brown and cooked through. Once done, transfer the chicken to a platter and keep it warm.
  5. In the same pan, add the white wine, Dijon mustard, and chicken broth, stirring to scrape up all the browned bits from the bottom of the pan.
  6. In a separate bowl, combine the water and cornstarch, mixing until smooth. Then, add the cornstarch mixture to the pan, stirring until well incorporated.
  7. Next, add the craisins to the pan and allow the mixture to come to a boil. Let it simmer for 1-2 minutes, or until the sauce has thickened to your desired consistency.
  8. Finally, stir in the chopped green onion tops and cook for an additional minute.
  9. Pour the flavorful sauce over the cooked chicken strips, and serve immediately.
