Ingredients:
- 1 boneless, skinless chicken breast
- 1/2 cup flour
- 1 tablespoon butter
- 1 tablespoon lite olive oil
- 1/4 cup white wine
- 2/3 cup chicken broth
- 2/3 cup Dijon mustard
- 3 tablespoons cornstarch
- 1 1/2 cups water
- 1 1/2 cups craisins
- 1/2 cup chopped green onion tops
Instructions:
- Begin by slicing the chicken breasts lengthwise into 1-inch strips.
- Lightly coat the chicken pieces with flour, then sprinkle them lightly with salt and pepper.
- In a large frying pan, heat the butter and olive oil over medium heat.
- Add the chicken strips to the pan and cook for about 2 minutes on each side, until they are golden brown and cooked through. Once done, transfer the chicken to a platter and keep it warm.
- In the same pan, add the white wine, Dijon mustard, and chicken broth, stirring to scrape up all the browned bits from the bottom of the pan.
- In a separate bowl, combine the water and cornstarch, mixing until smooth. Then, add the cornstarch mixture to the pan, stirring until well incorporated.
- Next, add the craisins to the pan and allow the mixture to come to a boil. Let it simmer for 1-2 minutes, or until the sauce has thickened to your desired consistency.
- Finally, stir in the chopped green onion tops and cook for an additional minute.
- Pour the flavorful sauce over the cooked chicken strips, and serve immediately.
