Prep Time: 30 minutes
Total Time: 2 hours
Servings: 4

Ingredients:

  • 2 large russet potatoes 🥔
  • 1 cup Alfredo sauce 🍝
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 egg 🥚
  • 1 cup shredded cheddar cheese 🧀
  • 1 cup shredded mozzarella cheese 🧀
  • Paprika for sprinkling

Instructions:

Step Description
1 Preheat your oven to 425°F (220°C). Scrub the russet potatoes clean and pat them dry.
2 Place the potatoes on a baking sheet and bake for 45 minutes to an hour, or until they are tender when pierced with a fork.
3 Once the potatoes are baked, remove them from the oven and let them cool slightly.
4 Lower the oven temperature to 350°F (175°C).
5 Slice the baked potatoes in half lengthwise, and carefully scoop out the insides, leaving a thin shell of potato intact. Place the scooped-out potato flesh into a mixing bowl.
6 To the bowl of potato flesh, add the Alfredo sauce, garlic powder, black pepper, egg, and half of the shredded cheddar and mozzarella cheese. Mix everything together until creamy and well combined.
7 Spoon the creamy potato mixture back into the potato shells, mounding it slightly.
8 Sprinkle the remaining shredded cheddar and mozzarella cheese on top of each potato half, then dust with paprika for color and flavor.
9 Cover the stuffed potato halves loosely with aluminum foil and bake in the preheated oven at 350°F (175°C) for 20 minutes.
10 After 20 minutes, remove the foil and continue baking uncovered for an additional 10 minutes, or until the cheese is melted and bubbly, and the potatoes are heated through.
11 Once baked, remove the potatoes from the oven and let them cool for a few minutes before serving.
