Start by chopping the almond paste into small, even cubes. Place the pieces in a tall container, ensuring they are spread out for easy blending.

Using an immersion blender, blend the almond paste and water together until the mixture is smooth and well-combined.

Pour the mixture into your ice cream maker. Follow the manufacturer’s instructions for your specific machine (For the model we used, there’s no need to pre-cool the bowl in the fridge).

Let the ice cream maker run for at least 30 minutes, or until the texture becomes creamy and compact.

Once ready, transfer the granita into glassesโpreferably chilled, to prevent the granita from melting too quickly.
