Tomatoes (chopped) 4 medium

Almonds (soaked for 15 minutes and peeled) 20

Oil 1 tbsp
Cumin seeds (Jeera) 1/2 tsp

Instructions

  1. Gravy Preparation:

    • Start by preparing the gravy for the curry. Grind the onions, tomatoes, green chilies, garlic, and ginger into a smooth paste. Set it aside.
  2. Nuts Paste:

    • In a mixer grinder, add the soaked almonds and cashews along with 1/4 cup of water. Grind them into a smooth paste. Set it aside as well.
  3. Cooking the Curry:

    • Heat oil in a deep pan or wok. Add cumin seeds (jeera) and let them splutter for about 15 seconds.
    • Now, add the prepared gravy paste, along with turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook the mixture for 5 to 7 minutes, allowing the oil to separate from the masala.
  4. Adding Vegetables:

    • After the masala has cooked, add the chopped cauliflower and green peas. Stir well to combine all ingredients.
    • Add 1/2 cup of water to the curry and let it cook on medium heat until the cauliflower becomes tender and cooked through. This may take about 10–15 minutes.
  5. Nuts and Garnish:

    • Once the vegetables are cooked, add the prepared almond and cashew paste to the curry and mix well. Let it simmer for another 5 minutes to blend the flavors together.
    • Turn off the heat and garnish with freshly chopped coriander leaves.
  6. Serving Suggestion:

    • Amritsari Gobi Matar Ki Sabzi is best served hot with dal palak (spinach dal) and soft phulkas or parathas for a wholesome meal.
