Instructions:

  1. Begin by preparing the artichokes. Start by removing the tough outer leaves. Once you’ve reached the tender heart, trim the top of the artichokes.
  2. Cut the artichokes into quarters or fifths, depending on their size. Remove the choke (the fuzzy center) from each piece, and as you work, place the artichoke pieces into a bowl of water mixed with the juice of two squeezed lemons to prevent them from browning.
  3. Once all the artichokes are cleaned, transfer them to a saucepan. Cook the artichokes until they are tender (approximately 10-15 minutes), making sure to monitor the water level to avoid burning them. Once cooked, drain them thoroughly and discard the lemon-infused water.
  4. Allow the cooked artichokes to cool slightly. Transfer them to a blender or food processor. Add the extra virgin olive oil and finely chopped parsley. Season with a pinch of fine salt, adjusting the amount according to your taste.
  5. Blend the mixture until it reaches a smooth, homogeneous texture. If necessary, scrape down the sides of the blender or food processor to ensure even blending.
  6. Once the pâté is ready, transfer it to a bowl and cover it tightly with plastic wrap, ensuring that the wrap touches the surface of the pâté to prevent it from oxidizing. Place it in the refrigerator and allow it to rest for about 20 minutes. This resting time will help the flavors meld and the pâté to become firmer.
  7. Serve the artichoke pâté on toasted bread slices or crostini for a delicious appetizer or snack.
