Sedanini Rigati with Artichoke Cream

Artichokes 500g
Vegetable broth as needed

Black olives (pitted) 40g

Grana Padano DOP cheese (grated) to taste

Instructions

  1. Preparing the Artichokes:
    Begin by cleaning the artichokes. Cut off the stems and remove the tough outer leaves until you reach the more tender inner layers. Slice the artichokes in half, then remove the fuzzy choke from the center.

  2. Prepare the Aromatics:
    Peel and finely chop the shallot. Remove the outer leaves of the leek, then slice it thinly.

  3. Sautรฉ the Vegetables:
    Heat the olive oil in a large pan over medium heat. Add the shallot and sautรฉ until it becomes soft and translucent. Once softened, add the sliced leek and cook for an additional 5 minutes, allowing it to become tender.

  4. Cook the Artichokes:
    Add the artichokes to the pan and cook for about 15 minutes, or until they become tender. If needed, add a bit of vegetable broth to prevent sticking and help with cooking. Once the artichokes are cooked, blend them with an immersion blender until smooth, forming a creamy mixture.

  5. Cooking the Pasta:
    While the vegetables are cooking, bring a large pot of salted water to a boil. Once boiling, add the sedanini rigati and cook according to the package instructions, approximately 10 minutes, until al dente.

  6. Combine and Finish:
    Drain the pasta and transfer it directly into the pan with the artichoke cream. Add the pitted black olives, sun-dried tomatoes, and a pinch of black pepper to taste. Toss everything together to ensure the pasta is well coated with the creamy artichoke mixture.

  7. Serve:
    Once combined, sprinkle with grated Grana Padano DOP cheese to your liking. Serve the pasta hot, ensuring itโ€™s full of flavor and perfectly creamy.
