Ingredients:

  • 2 ripe Avocados, cut lengthwise
  • 1 teaspoon Lemon juice
  • 1 teaspoon Black pepper powder
  • 1 pinch Salt
  • 1 1/2 teaspoons Extra Virgin Olive Oil
  • 8 slices Whole Wheat Brown Bread
  • 1 Cucumber, sliced
  • 10 Pickled Jalapenos
  • 2 Boiled eggs, sliced into rounds
  • Lettuce leaves (Iceberg)
  • 2 Pickled Gherkins
  • Fresh Coriander (Dhania) Leaves, finely chopped

Instructions:

  1. Scoop out the flesh from the 2 ripe avocados and mash it with a fork. Add the olive oil, salt, pepper, and lemon juice. Mix well until smooth.
  2. Slice the other two avocados lengthwise and sprinkle them with lemon juice to prevent oxidation. Set the slices aside.
  3. Boil the eggs, let them cool, peel, and slice them into rounds.
  4. Take two slices of whole wheat bread and spread the mashed avocado mixture on each slice.
  5. Layer your desired toppings: add lettuce, cucumber slices, pickled gherkins, boiled eggs, and avocado slices.
  6. Top off the sandwich with freshly chopped coriander leaves for added flavor.
