  • 1 1/2 tbsp soy margarine
  • 1 tbsp canola oil
  • 2 onions, finely chopped
  • 1 celery rib, finely chopped
  • 3 1/2 cups cooked great northern beans, drained and rinsed
  • 1/2 cup water (plus more if needed)
  • 1 1/2 cups sliced mushrooms
  • 1 cup soymilk
  • 1 cup low-fat milk
  • 1 1/2 cups grated low-fat cheddar cheese
  • 2 cups small shell pasta
  • Salt, to taste
  • Cayenne pepper, to taste

Instructions:

Step Description
1 In a soup pot, heat the soy margarine or oil over medium heat.
2 Add the chopped onion and celery, and sauté over medium-low heat until the onion turns golden brown.
3 While the vegetables are cooking, puree the great northern beans in a blender until smooth. Add a small amount of water if necessary to achieve a smooth consistency.
4 Once the onion and celery are golden, pour in the vegetable stock or water, ensuring that the vegetables are covered. Bring to a simmer.
5 Stir in the bean puree, sliced mushrooms, and seasoning mix. Simmer gently, covered, for 30-35 minutes.
6 Gradually stir in the soymilk or low-fat milk to achieve a slightly thick consistency.
7 Remove the soup from the heat and sprinkle in the grated low-fat cheddar cheese, adding it bit by bit and stirring until mostly melted (note: soy cheese may not melt as completely).
8 Cover the soup and set aside. In a separate saucepan, cook the small shell pasta until al dente. Drain and stir into the soup.
9 Adjust the consistency of the soup by adding more milk or soymilk as needed. Return the soup to low heat.
10 Season the soup to taste with salt and cayenne pepper.
11 Remove the soup from the heat and serve hot.
