Dimer Malai Curry Recipe

Ingredients:

  • 4 boiled eggs (peel and set aside)
  • 3 onions (paste)
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 2 tomatoes (pureed)
  • 1 cup coconut milk
  • 4 green chilies (slit)
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 1½ tsp red chili powder
  • 1 tsp cumin powder
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 4 cloves
  • 4 whole black peppercorns
  • 1 large cardamom
  • 2 green cardamoms
  • Salt to taste
  • Oil as needed
  • 1 tsp dried fenugreek leaves (kasuri methi)
  • 1 tbsp fresh coriander (chopped)

Prep Time: 15 minutes
Cook Time: 50 minutes

Instructions:

  1. Start by boiling the eggs, peel them, and sprinkle turmeric powder over them. Set aside.
  2. Heat oil in a pan and fry the boiled eggs until golden brown. Remove and set aside.
  3. In the same pan, heat some more oil. Add bay leaf, cinnamon, cloves, black peppercorns, cardamom, and green cardamom. Sauté for 20-30 seconds.
  4. Add the onion paste, ginger paste, and garlic paste. Cook for 3-4 minutes until fragrant.
  5. Add the slit green chilies and tomato puree. Cook for another 4-5 minutes.
  6. Add red chili powder, coriander powder, and cumin powder. Stir well and cook for 3-4 minutes to blend the flavors.
  7. Add ½ cup water and salt. Stir to combine and cook for 5 minutes.
  8. Pour in the coconut milk, mix well, and let it simmer. Turn off the heat once the curry reaches a creamy consistency.
  9. Add the fried eggs, dried fenugreek leaves, and fresh coriander. Stir to combine.
  10. Serve the Dimer Malai Curry hot with Tawa Paratha and Mint Onion Kachumber Salad for a delicious meal.
