Brie and Wild Mushroom Fondue Recipe

Ingredients:
- 1 cup water 🥣

- 8 ounces shiitake mushrooms, stemmed and sliced 🍄
- 2 shallots, finely chopped
- 1 tablespoon cornstarch
- 2 cups dry white wine 🍷
- 1 pound Brie cheese, rind removed and cubed 🧀
- Salt and pepper to taste 🧂
- For serving:
- Small red potatoes, boiled until tender 🥔
- Asparagus spears, blanched until crisp-tender
- Green beans, blanched until crisp-tender
- Focaccia bread, cubed 🥖
Instructions:
Step | Description |

1 | In a small saucepan, bring 1 cup of water to a boil. |
2 | Add the dried porcini mushrooms to the boiling water. |
3 | Remove the saucepan from the heat and let the mushrooms soak until softened, approximately 20 minutes. |
4 | Using a slotted spoon, transfer the softened porcini mushrooms to a cutting board and coarsely chop them. Reserve both the mushrooms and the soaking liquid. |
5 | In a heavy large saucepan, melt the butter over medium heat. |
6 | Add the sliced shiitake mushrooms to the saucepan and sauté until tender, about 3 minutes. |
7 | Stir in the chopped shallots and sauté for an additional minute. |
8 | Add the chopped porcini mushrooms and the reserved soaking liquid to the saucepan, being careful to leave any sediment behind. |
9 | Increase the heat to high and simmer until the liquid has evaporated, approximately 3 minutes. |
10 | If preparing ahead, cover and chill the mushroom mixture at this point, up to 8 hours in advance. |
11 | In a large bowl, toss the cubed Brie cheese with cornstarch until evenly coated. |
12 | Pour the dry white wine into the saucepan with the mushroom mixture and bring to a simmer over medium heat. |
13 | Gradually add the Brie cheese to the mushroom mixture in three batches, whisking continuously until each addition has melted before adding more. |
14 | Continue whisking until the fondue is smooth and just begins to simmer, being careful not to let it boil. |
15 | Season the fondue to taste with salt and pepper. |
16 | Transfer the prepared fondue to a fondue pot and set it over a candle or canned heat burner to keep warm. |
17 | Serve the Brie and Wild Mushroom Fondue alongside the boiled potatoes, blanched asparagus and green beans, and cubed focaccia bread for dipping. |
