Paula’s Cream of Broccoli Soup Recipe

Ingredients:

  • 6 tbsp butter
  • 1/2 cup finely chopped onion
  • 6 tbsp all-purpose flour
  • 3 chicken bouillon cubes
  • 1/2 tsp seasoning salt
  • 1/4 tsp pepper
  • 4 1/2 cups milk
  • 1 lb broccoli florets, cooked according to package directions

Instructions:

  1. Prepare the Base:

    • In a medium saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent.
  2. Make the Soup Base:

    • Stir in the flour, chicken bouillon cubes, seasoning salt, and pepper. Cook for about 1-2 minutes until the mixture is smooth and bubbly.
  3. Add the Milk:

    • Gradually whisk in the milk, stirring constantly to avoid lumps. Bring the mixture to a boil over medium heat, stirring frequently.
  4. Simmer with Broccoli:

    • Once boiling, reduce the heat to low. Add the cooked broccoli florets and simmer for an additional 10 minutes, stirring occasionally.
  5. Serve or Crock Pot Option:

    • Serve the soup hot as is, or transfer it to a crock pot set on low to keep warm until ready to serve.
  6. Notes:

    • For a thicker soup in the crock pot, triple the cream soup base recipe and add 2 packages of broccoli florets.
