Instructions:
Step | Description | Time |
---|---|---|
1 | Cut the broccoli buds into small florets, leaving short stems. Cut the remaining broccoli stems into 1/2″ pieces. Boil the stem pieces in 1 1/4 cups of lightly salted water for 15 minutes or until very soft. | 15 minutes |
2 | Meanwhile, boil the bow tie pasta in salted water until al dente. Drain the pasta, reserving 1/2 cup of the cooking water. Return the pasta to the pot and stir until all moisture is evaporated. | 10 minutes |
3 | Place the reserved broccoli florets into a small pot and steam or boil for 5 minutes, retaining their bright green color and a bit of crunch. | 5 minutes |
4 | In a food processor, puree the cooked broccoli and its cooking water until very smooth. Add a bit of the reserved pasta water if needed to make a smooth sauce. Add the butter and pulse until melted. Season with salt to taste. | 5 minutes |
5 | Pour the warm broccoli sauce over the pasta and stir gently to combine. Plate the pasta and sprinkle with the drained broccoli florets. | 0 minutes |
Tips:
- For added flavor, consider tossing the pasta with grated Parmesan cheese before serving.
- You can customize this dish by adding cooked chicken or shrimp for a protein boost.
- Make sure to cook the broccoli until very soft to achieve a smooth sauce texture.
- If you prefer a thinner sauce, adjust the consistency by adding more reserved pasta water.
