Instructions
- Start by washing the broccoli thoroughly. Carefully separate the florets from the central stalk and rinse them again.
- Once the broccoli is cleaned, transfer the florets into a mixing bowl or a food processor. Add the fresh basil leaves, blanched almonds, pine nuts, and the grated Grana Padano DOP cheese.
- Pour in half of the extra virgin olive oil, and begin processing the mixture using the food processor. Blend until the ingredients are finely chopped and begin to form a smooth paste.
- If the pesto is too thick or dry, gradually add more olive oil until it reaches your desired consistency. The final pesto should be creamy and velvety.
