Ingredients:

  • 1 fresh broccoli florets
  • 2 shallots
  • 2 tablespoons butter
  • 1/2 cup heavy whipping cream
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon white pepper
  • 2 teaspoons lemon juice
  • 1/4 cup grated Parmesan cheese
  • 6 tablespoons grated Asiago cheese
  • 2 eggs

Instructions:

  1. Preheat oven to 325°F (165°C).

  2. Blanch Broccoli: In a large kettle or Dutch oven, bring 3 quarts of water to a boil. Add the broccoli florets and return to a boil, cooking until tender, approximately 3-5 minutes. Drain the broccoli and immediately plunge it into icy water to stop the cooking process. Once cold, drain well, reserving 8 small florets for garnish.

  3. Prepare Shallots: In a small skillet, melt the butter over medium heat. Add the shallots and sauté until transparent, about 5 minutes. Allow the mixture to cool slightly.

  4. Puree Broccoli Mixture: In the bowl of a food processor, combine the cooked broccoli and shallot-butter mixture. Process until smooth.

  5. Add Remaining Ingredients: Add the heavy whipping cream, salt, white pepper, lemon juice, Parmesan cheese, Asiago cheese, and eggs to the food processor. Process until the mixture is smooth and creamy. If not baking immediately, refrigerate the mixture until ready to use.

  6. Prepare Ramekins: Butter 8 (6 oz) ramekins or custard cups, or use disposable foil cupcake size cups.

  7. Fill Ramekins: Divide the pureed broccoli mixture evenly among the prepared ramekins.

  8. Bake in Water Bath: Arrange the filled ramekins in a 9×13-inch baking pan. Pour boiling water into the baking pan, filling it halfway up the sides of the ramekins. Cover the pan loosely with foil.

  9. Bake: Place the baking pan in the preheated oven and bake for 35-40 minutes, or until a knife inserted into the center of a timbale comes out clean.

  10. Serve: Once baked, carefully run a knife around the edge of each cup and invert the timbales onto dinner plates. Garnish each timbale with a cooked broccoli floret before serving.
