Recipe: Cabbage and Bacon Pasta

Organic Spaghetti 320g
Green Cabbage (Cavolo Cappuccio) 200g
Red Cabbage (Cavolo Rosso) 200g
Smoked Bacon (Pancetta Affumicata) 160g
Stracchino Cheese 200g
Oregano To taste
Fine Salt To taste
Black Pepper To taste

Instructions:

  1. Prepare the Pasta:

    • Begin by bringing a large pot of salted water to a boil. Once the water reaches a rolling boil, add the spaghetti and cook according to the package instructions. Once cooked, drain and set aside, keeping a little pasta water for later if needed.
  2. Cook the Bacon:

    • While the pasta is cooking, take the slices of smoked bacon and roll them up tightly. Slice the rolled bacon into thin strips to create little bacon ribbons.
    • Heat a pan over medium heat (without adding any oil) and place the bacon strips in the pan. Let them cook for about 4 minutes, stirring occasionally with a wooden spoon. The bacon will become crispy and release its fat. Once crispy, remove the bacon using a slotted spoon and set aside on a paper towel to drain excess fat.
  3. Sauté the Cabbage:

    • In the same pan with the bacon fat, add the shredded green and red cabbage. Stir well to combine and sauté over medium heat. Season with salt and continue cooking for 5-7 minutes until the cabbage becomes tender and lightly caramelized.
  4. Combine Pasta and Cabbage:

    • Once the cabbage is cooked, add the cooked spaghetti directly to the pan with the cabbage. Toss everything together to coat the pasta in the cabbage and bacon fat. Let it sit covered for 30 seconds to 1 minute to allow the flavors to combine.
  5. Add the Cheese and Final Touches:

    • Lower the heat and add the Stracchino cheese to the pan. Stir well to melt the cheese into the pasta, creating a creamy sauce. Taste and adjust the seasoning with more salt, pepper, and oregano, if desired.
  6. Serve:

    • Plate the pasta, garnishing with the crispy bacon strips on top. Optionally, add more Stracchino cheese and a sprinkle of black pepper and oregano for extra flavor.
  7. Enjoy:
