Indian Creamy Rice Pudding (Phirni) Recipe

Ingredients
- 1 liter (4 cups) milk
- 10 cardamom pods
- 3 tablespoons rice (preferably basmati), ground into a coarse powder
- 6-7 tablespoons sugar (adjust according to taste)
- 4 tablespoons almonds, slivered and lightly roasted
- 2 tablespoons pistachios, chopped and lightly roasted
Instructions

Prepare the Milk Base:
- Pour the milk into a wide, preferably non-stick pan.
- Add the cardamom pods and bring the milk to a boil without letting it spill over.

Reduce and Thicken:
- Reduce the heat to medium and let the milk simmer vigorously for about 15-20 minutes, stirring occasionally.
- Continue until the milk reduces to approximately 750 ml (1 1/4 pints).

Add Rice and Sugar:
- Slowly sprinkle the ground rice into the pan, stirring continuously to avoid lumps.
- Add the sugar gradually while stirring.

Cook to Creamy Consistency:
- Cook the mixture for 7-8 minutes, or until the pudding thickens to a creamy consistency.
- Towards the end, reduce the heat slightly to prevent sticking.

Finish the Pudding:
- Once the pudding reaches the desired consistency, turn off the heat.
- Remove and discard the cardamom pods from the mixture.

Prepare the Nuts:
- Lightly roast the almonds and pistachios on a cast iron griddle pan until fragrant and lightly browned.
- Set them aside to cool.

Incorporate Nuts:
- When the pudding has cooled to lukewarm, stir in the roasted almonds.

Chill and Serve:
- Ladle the pudding into 4-6 small serving cups, such as those used for caramel custard.
- Sprinkle the top of each serving with roasted pistachios.
- Cover the cups with cling film and refrigerate for 2-3 hours until cold and set.

Serve Cold:
- Once chilled, serve the Phirni cold, garnished with extra pistachios if desired.
