Indian Creamy Rice Pudding (Phirni) Recipe

Ingredients

  • 1 liter (4 cups) milk
  • 10 cardamom pods
  • 3 tablespoons rice (preferably basmati), ground into a coarse powder
  • 6-7 tablespoons sugar (adjust according to taste)
  • 4 tablespoons almonds, slivered and lightly roasted
  • 2 tablespoons pistachios, chopped and lightly roasted

Instructions

  1. Prepare the Milk Base:

    • Pour the milk into a wide, preferably non-stick pan.
    • Add the cardamom pods and bring the milk to a boil without letting it spill over.
  2. Reduce and Thicken:

    • Reduce the heat to medium and let the milk simmer vigorously for about 15-20 minutes, stirring occasionally.
    • Continue until the milk reduces to approximately 750 ml (1 1/4 pints).
  3. Add Rice and Sugar:

    • Slowly sprinkle the ground rice into the pan, stirring continuously to avoid lumps.
    • Add the sugar gradually while stirring.
  4. Cook to Creamy Consistency:

    • Cook the mixture for 7-8 minutes, or until the pudding thickens to a creamy consistency.
    • Towards the end, reduce the heat slightly to prevent sticking.
  5. Finish the Pudding:

    • Once the pudding reaches the desired consistency, turn off the heat.
    • Remove and discard the cardamom pods from the mixture.
  6. Prepare the Nuts:

    • Lightly roast the almonds and pistachios on a cast iron griddle pan until fragrant and lightly browned.
    • Set them aside to cool.
  7. Incorporate Nuts:

    • When the pudding has cooled to lukewarm, stir in the roasted almonds.
  8. Chill and Serve:

    • Ladle the pudding into 4-6 small serving cups, such as those used for caramel custard.
    • Sprinkle the top of each serving with roasted pistachios.
    • Cover the cups with cling film and refrigerate for 2-3 hours until cold and set.
  9. Serve Cold:

    • Once chilled, serve the Phirni cold, garnished with extra pistachios if desired.
