Instructions

  1. Cook the Carrots
    Begin by heating 1 tablespoon of ghee in a saucepan. Add the grated carrots to the pan and cook for about 5 minutes, stirring occasionally, until they soften slightly and release their natural sweetness.

  2. Prepare the Milk Mixture
    In another saucepan, heat the milk and add sugar. Allow it to come to a boil. Once the milk starts boiling, add the cooked carrots, cardamom powder, and saffron strands. Let the mixture simmer for 10 minutes, allowing the flavors to blend together.

  3. Add the Semolina
    Gradually add the semolina (suji) to the milk mixture while continuously stirring to avoid lumps. Continue to cook and stir for another 10-12 minutes, until the semolina absorbs the milk and the mixture thickens to a creamy consistency.

  4. Finish the Phirni
    Once the phirni reaches a thick, creamy consistency, turn off the heat. Set the mixture aside to cool slightly.

  5. Prepare the Garnish
    In a small frying pan, heat the remaining ghee and add the blanched almonds. Fry them for about 10 seconds or until they turn golden and aromatic. Pour this almond tempering over the phirni and mix well.

  6. Serve
