Casarecce with Fava Bean Puree

Frozen fava beans 400g
Tomato paste 80g
White onion 1
Wild fennel 10g
Extra virgin olive oil to taste
Salt to taste
Ground chili pepper to taste
Bread croutons to taste
Water 2 liters

Instructions

  1. Begin by preparing the fava bean puree for the casarecce. In a non-stick pot, heat a little olive oil over low heat. Add the finely chopped white onion and sauté for a couple of minutes until the onion becomes translucent and lightly golden.

  2. Once the onion is softened, add the frozen fava beans to the pot along with the tomato paste. Stir in the wild fennel, which should be finely chopped, and season with salt.

  3. Allow the mixture to cook on a low flame for approximately 2 hours, stirring occasionally, until it has reduced into a thick, hearty consistency. The flavors should meld beautifully during this time.

  4. After the fava bean mixture has thickened, use an immersion blender to blend the contents into a creamy puree, but leave some small pieces of vegetables intact for texture. Taste the puree and adjust the salt if necessary. If you like a bit of heat, sprinkle in some ground chili pepper to your liking.

  5. In a separate pot, bring 2 liters of water to a boil and cook the casarecce pasta according to the package instructions until al dente.

  6. Once the pasta is ready, drain it and add it directly into the pot with the fava bean puree. Stir gently to ensure the pasta is well coated with the creamy sauce.

  7. Drizzle a little extra virgin olive oil over the dish to enhance its richness.

  8. Serve your casarecce with fava bean puree with a generous handful of warm, crispy bread croutons for added crunch and flavor.
