  • Transfer the skillet to the oven and bake the croutons for 12-15 minutes, stirring occasionally, until they turn golden brown and crisp. These can be made ahead and stored in a zip bag.

2. Prepare the Soup

  • In a large saucepan, melt the butter over medium heat.
  • Add the onion and sauté until soft and translucent, which should take about 5 minutes.
  • Sprinkle in the flour, stirring to combine, and continue to cook for an additional couple of minutes.
  • Whisk in the dry white wine, followed by the stock, and add the bay leaf, salt, and white pepper.
