Green Beans Supreme

Description

This delightful recipe from my favorite community cookbook transforms simple green beans into a festive side dish perfect for holiday meals. Fresh green beans shine in this dish, though canned options work beautifully in a pinch. With the flexibility to bake between 300 and 350 degrees, it’s a lifesaver for those with only one oven. While my kids have a quirky aversion to “crunchy stuff” in casseroles, you can easily accommodate picky eaters by omitting the water chestnuts and almonds, though many appreciate these additions.

Ingredients

Quantity Ingredient
3 cups French style green beans
1/2 cup Fresh green beans
1 stick Butter
1 Margarine
1 Onion (sliced)
1 cup Button mushrooms (sliced)
1/4 cup All-purpose flour
1 cup Milk (heated)
1 cup Cheddar cheese (grated)
1/2 tsp Salt
1/2 tsp Fresh ground black pepper
1/4 tsp Accent seasoning
1 can Water chestnuts (sliced, optional)
1/4 cup Breadcrumbs
1/4 cup Chopped almonds (optional)

Instructions

  1. Prepare the Beans: Begin by heating the green beans thoroughly. Once heated, drain them well and set aside.

  2. Sauté the Vegetables: In a large skillet, melt 1 stick of butter over medium heat. Add the sliced onion and button mushrooms, sautéing them until they are tender and fragrant.

  3. Heat the Milk: While the vegetables are cooking, gently heat the milk in a separate saucepan, being careful not to let it boil. If a film forms on top, skim it off before proceeding.

  4. Make the Sauce: Once the vegetables are tender, sprinkle the flour over the sautéed mixture in the skillet. Stir continuously until the flour is fully incorporated and the mixture is smooth.

  5. Thicken the Sauce: Gradually pour the warm milk into the skillet in a slow stream, stirring constantly until the sauce thickens to your desired consistency.

  6. Add Cheese and Seasonings: Stir in the grated cheddar cheese along with the salt, black pepper, and Accent seasoning. Allow the sauce to simmer, stirring frequently until the cheese is completely melted and well combined.

  7. Combine with Beans: Add the drained green beans and sliced water chestnuts (if using) to the cheese sauce, stirring thoroughly to ensure the beans are well-coated.

  8. Prepare for Baking: Pour the mixture into a lightly greased baking dish. Evenly distribute the breadcrumbs on top and dot with thin slivers of butter. If desired, sprinkle chopped almonds over the casserole.

  9. Bake: Place the dish in the oven and bake at any temperature between 300 and 350 degrees Fahrenheit for approximately 20-35 minutes, or until the casserole is bubbly and golden brown.

  10. Serve: Once baked, remove from the oven and let cool slightly before serving. Enjoy this creamy, cheesy delight as a festive addition to your holiday table!

This Green Beans Supreme dish is sure to be a hit, bringing a touch of elegance to your meal while accommodating a variety of taste preferences.
