Cook the Chestnuts:
Begin by preparing the chestnuts. Using a sharp knife, score the chestnuts and place them in boiling water. Allow them to cook until they are soft. -
Melt the Chocolate:
While the chestnuts are cooking, coarsely chop the dark chocolate. Place it in a heatproof bowl set over a pot of simmering water to melt it using the double boiler method. Stir occasionally to ensure the chocolate melts evenly. -
Prepare the Butter Chocolate Mixture:
Once the chocolate has melted, add the butter to the bowl and mix it thoroughly with a whisk until itβs fully incorporated. -
Peel and Prepare the Chestnuts:
When the chestnuts are fully cooked, drain them and peel them while they are still warm. Remove the shells and the inner skin. Once peeled, collect the chestnut flesh and transfer it to a bowl. -
Mash the Chestnuts and Combine:
Mash the chestnut flesh with a spatula, then add the sugar. Stir the mixture with the spatula, and once combined, use a whisk to smooth out the texture. -
Assemble the Chestnut Mixture:
Transfer the chestnut mixture into a piping bag (without a nozzle or with a wide nozzle). -
Fill the Cups:
Take four small cups (each with a 130g capacity) and fill each with the chestnut mixture, leaving about 3-4 cm from the rim. -

Cover the cups with plastic wrap and refrigerate for at least one hour to allow the mixture to set. -

After an hour, take the cups out of the fridge. Using a piping bag fitted with a star-shaped nozzle, top each chestnut cup with a swirl of freshly whipped cream. -
