Ingredients:

125g plain flour 300-400g cooked chicken 60g butter
1 tsp salt 2 ripe avocados 2 tbsp plain flour
2 large eggs 500ml milk
1 1/4 cups milk 60ml light sour cream
3 tbsp butter 1 tbsp lemon juice
30g Romano cheese
1/4 tsp nutmeg
Salt and pepper to taste

Instructions:

Making the Crepes:

  1. Combine the plain flour, salt, eggs, and milk in a mixing bowl to make the crepe batter.
  2. Cook the crepes in a non-stick pan over medium heat until golden brown on both sides. This should yield about 10-12 crepes.

Preparing the Filling:

  1. Peel the avocados, remove the stones, and dice them.
  2. Drizzle the diced avocados with lemon juice to prevent browning.
  3. Mix the avocado with the diced chicken in a bowl, combining gently.

Making the White Sauce:

  1. Melt the butter in a saucepan over medium heat.
  2. Stir in the plain flour to form a roux, then gradually add the milk and sour cream, stirring constantly.
  3. Continue cooking until the sauce thickens and becomes smooth.
  4. Season the sauce with lemon juice, grated Romano cheese, nutmeg, salt, and pepper to taste.

Assembling the Crepes:

  1. Pour half of the prepared white sauce over the chicken and avocado mixture, stirring gently to combine.
  2. Spread the filling along one edge of each crepe, then roll them up.
  3. Arrange the filled crepes side by side in a lightly greased baking dish.

Final Steps:
