Instructions:

  1. Prepare the vegetables:
    Start by washing the celery thoroughly and peeling off any tough fibers with a vegetable peeler. Chop the celery into small pieces. Next, peel and thinly slice the red onion. Peel and cut the garlic cloves in half lengthwise. Peel the carrots and cut them into sticks.

  2. Prepare the tomatoes:
    Using a vegetable peeler, remove the skins of the tomatoes. Cut each tomato in half and remove the core. Then, slice them into thin wedges, discarding the seeds and inner pulp.

  3. Prepare the potatoes:
    Peel the potato and cut it in half lengthwise, then slice it thinly. Set aside.

  4. Prepare the ginger:
    Peel the fresh ginger using a vegetable peeler and finely chop it.

  5. Prepare the lime:
    Cut one lime into quarters and slice thinly for added freshness.

  6. Prepare the chili peppers:
    Slice the red and green chili peppers in half, remove the seeds, and chop them into small pieces.

  7. Marinate the chicken:
    Cut the chicken breast into medium-thick strips and place them in a bowl. Add the juice from the two remaining limes, the cloves, and the juniper berries. Mix well to coat the chicken evenly. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld.

  10. Add chicken to the soup:
    Once the soup vegetables are tender, add the cooked chicken to the pot. Stir well, season with salt to taste, and cover the pot. Let the soup simmer for another 30 minutes to allow the flavors to blend.

  11. Prepare the avocado:
    While the soup is simmering, cut the avocado in half, remove the pit, and scoop out the flesh with a spoon. Slice the avocado into thin pieces and set aside.

  12. Finish the soup:
    After the soup has simmered for the full 50 minutes, remove the pot from the heat. Add the sliced avocado to the soup and gently stir to incorporate. Cover the pot and let the soup rest for a few minutes so the avocado softens slightly.

  13. Garnish and serve:
