Chicken and Green Noodle Casserole Recipe

Ingredients:

  • 3-4 chicken breast halves
  • 1 green pepper
  • 1 onion
  • 1 celery stalk
  • 1/2 cup butter
  • 1/2 cup margarine
  • 1 Velveeta cheese block
  • 1 can cream of mushroom soup
  • 1 can sliced mushrooms
  • Salt, to taste
  • 12 ounces egg noodles
  • 1 cup crushed buttery crackers

Instructions:

  1. Cook Chicken: In a large pot, bring salted water to a boil. Add chicken breast halves and cook for 25-30 minutes or until tender. Once cooked, remove chicken from the pot and reserve the stock for later use.

  2. Prepare Chicken: Cut the cooked chicken meat into bite-size pieces and set aside.

  3. Cook Noodles: Cook the egg noodles in the reserved chicken stock until tender. Once cooked, drain the noodles and set them aside.

  4. Saute Vegetables: In a skillet, melt 1/4 cup of butter over medium heat. Add diced green pepper, onion, and celery, and sauté until tender.

  5. Melt Cheese: Add the Velveeta cheese to the skillet with the sautéed vegetables. Cook, stirring constantly, until the cheese is melted and well incorporated.

  6. Add Soup and Mushrooms: Stir in the cream of mushroom soup and the sliced mushrooms. Cook the mixture until it becomes bubbly and well combined.

  7. Combine Ingredients: Add the cooked chicken pieces and noodles to the skillet. Mix everything together until the chicken and noodles are evenly coated with the sauce.

  8. Prepare Casserole: Preheat your oven to 325°F (165°C). Grease a 13 x 9 x 2 inch baking dish with cooking spray or butter. Transfer the chicken and noodle mixture into the prepared baking dish.

  9. Prepare Crumb Topping: In a small bowl, combine the remaining 1/4 cup of butter with the crushed buttery crackers. Mix until the butter evenly coats the crumbs.

  10. Top and Bake: Sprinkle the buttery cracker mixture over the chicken and noodle mixture in the baking dish, covering it evenly. Place the casserole in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the casserole is heated through.
