Ingredients:

Recipe Instructions:

  1. Note: You can cook your own chicken to use instead of using the canned meat. This is what I usually do. Turkey can also be substituted.
  2. One hour before serving, spread 1 cup of sour cream in the bottom of a 9 x 13 inch baking dish; set aside.
  3. In a 2-quart saucepan, flake chicken with a fork, then add 1/2 cup sour cream, mushrooms, green chilies, and seasonings.
  4. Cook over low heat, stirring occasionally until heated through.
  5. Preheat the oven to 450Β°F (232Β°C).
  6. In an 8-inch skillet, heat 1/2 inch of cooking oil over medium-high heat.
  7. Cook each tortilla for a few seconds on each side, then remove and drain on paper towels. (If watching your fat intake, you can skip this step, and the meal will still be delightful.)
  8. Along the center of each tortilla, spread 1/4 cup of the chicken mixture.
  9. Fold the sides of the tortilla over the filling and place seam side down in the prepared baking pan.
  10. When all tortillas are filled and placed in the pan, spread the remaining sour cream over the top and then sprinkle with cheese.
  11. Bake for 8 minutes or until the cheese melts to a gooey, golden perfection.
