Ingredients:

  • 2-3 cups cooked chicken, shredded
  • 1 onion, diced
  • 1 tablespoon flour
  • 2 green chilies, diced
  • 1 cup sour cream
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 cup tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons taco seasoning
  • Cooking oil spray

2 Heat oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
3 Stir in the cooked shredded chicken and flour, cooking until the flour is well incorporated and no longer visible, about 2-3 minutes.
4 Add diced green chilies and taco seasoning to the skillet, stirring to combine.
5 Mix in sour cream, black beans, and corn, continuing to stir until the mixture begins to boil. Remove from heat.
6 Spray a 9×13-inch baking dish with cooking oil spray. Transfer the chicken mixture into the prepared baking dish, spreading it out evenly.
7 In a bowl, combine crushed tortilla chips with half of the shredded cheese. Sprinkle this mixture evenly over the chicken mixture in the baking dish.
8 Bake in the preheated oven for about 25 minutes, or until the mixture is bubbly and the top is lightly browned.
9 Remove from the oven and sprinkle the remaining shredded cheese over the top. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
