Creamy Chicken Macaroni Schotel Recipe

Ingredients:

  • 200 grams elbow macaroni, cooked until al dente
  • 250 ml whole milk
  • 3 small eggs
  • 150-200 grams chicken breast, boiled and shredded
  • 1 small onion, roughly chopped
  • 3 cloves garlic, finely chopped
  • 50 grams grated cheddar cheese
  • 1 sachet chicken seasoning powder
  • Salt, black pepper, nutmeg, and oregano to taste
  • Cooking oil for sautéing

For the White Sauce:

  • 250 ml whole milk
  • 2 tablespoons all-purpose flour
  • 50 grams grated cheddar cheese
  • 2 tablespoons margarine

Instructions:

  1. Prepare the Ingredients:

    • Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
    • In a bowl, whisk together the eggs and 250 ml of milk until well combined. Add grated cheddar cheese and season with salt, black pepper, nutmeg, and oregano. Set aside.
    • Sauté the chopped onion and garlic in a pan until fragrant. Add the shredded chicken breast and cook until the chicken is cooked through. Set aside.
  2. Make the White Sauce:

    • In a separate saucepan, melt the margarine over medium heat. Once melted, add the all-purpose flour and stir quickly to form a roux.
    • Gradually pour in 250 ml of milk while stirring continuously to avoid lumps. Add grated cheddar cheese and continue stirring until the sauce thickens. Remove from heat.
  3. Assemble the Macaroni Schotel:

    • Preheat the oven to 180°C (350°F).
    • Combine the cooked macaroni and chicken mixture. Adjust seasoning if needed.
    • Grease a baking dish with butter or oil. Layer the macaroni and chicken mixture evenly in the baking dish.
    • Pour the prepared white sauce over the macaroni mixture, ensuring it covers evenly.
    • Optionally, sprinkle additional grated cheddar cheese and oregano on top for extra flavor.
  4. Bake the Schotel:

    • Place the baking dish in the preheated oven. Bake for 40-50 minutes or until the top is golden brown and the schotel is set.
    • Remove from the oven and let it rest for 10-20 minutes before serving to allow it to set.
  5. Serve:

    • Optionally, garnish with a drizzle of mayonnaise and spicy sauce on top before serving.
