Instructions:

Step Description
1 Begin by boiling the chicken thighs with the skin on until thoroughly cooked.
2 Once cooked, remove the chicken from the pot and reserve the chicken stock for later use.
3 Using a knife and fork, remove the skin and bones from the chicken thighs.
4 Shred or cut up the meat and return it to the chicken stock.
5 Peel and cube the potatoes, then add them to the stock.
6 Peel and chop the carrots, adding them to the stock along with diced onion and chopped celery.
7 Ensure all vegetables are submerged, adding more water if necessary, then bring to a boil.
8 Season with beef bullion, salt, and pepper, and continue to boil, stirring often.
9 Once vegetables are soft, melt the butter or margarine and add flour, stirring until creamy.
10 Add this mixture to the soup, stirring until fully dissolved, and boil for an additional 10 minutes.
11 Reduce heat to a simmer and continue cooking until the stew is thickened to your liking.
12 For a soup-like consistency, omit the flour and margarine.
