Category: Desserts
Serves: 4

Ingredients:

Ingredient Quantity
Egg yolks 4
Marsala wine 8 tbsp
Sugar 60g
Dark chocolate (finely chopped) 80g

Instructions:

  1. Begin by finely chopping the dark chocolate and setting it aside for later use.
  2. In a heavy-bottomed saucepan with a sturdy handle, combine the egg yolks and sugar. Using an electric whisk (or a traditional whisk if preferred), vigorously beat the mixture until it becomes smooth, fluffy, and almost white in color.
  3. Gradually add the Marsala wine, pouring it slowly into the mixture while continuing to whisk until the ingredients are well combined.
  4. Once the Marsala is fully incorporated, fold in the finely chopped dark chocolate, continuing to whisk until the chocolate is completely melted and evenly distributed throughout the mixture.
  5. Place the saucepan over a double boiler, making sure the water does not come to a boil, and gently continue whisking the mixture for at least 10 minutes. Keep whisking until the mixture has doubled in volume and forms a smooth, velvety custard-like cream.
  6. Remove the saucepan from the double boiler, and carefully pour the warm zabaione into individual serving cups or bowls.
  7. Serve immediately for the best texture and flavor.

This indulgent and creamy chocolate zabaione is perfect for a special occasion or a comforting treat to end a meal. The rich, velvety texture of the custard pairs beautifully with the depth of dark chocolate and the warmth of Marsala wine, creating a luxurious dessert experience. Enjoy!
