- Begin by finely chopping the dark chocolate and setting it aside for later use.
- In a heavy-bottomed saucepan with a sturdy handle, combine the egg yolks and sugar. Using an electric whisk (or a traditional whisk if preferred), vigorously beat the mixture until it becomes smooth, fluffy, and almost white in color.
- Gradually add the Marsala wine, pouring it slowly into the mixture while continuing to whisk until the ingredients are well combined.
- Once the Marsala is fully incorporated, fold in the finely chopped dark chocolate, continuing to whisk until the chocolate is completely melted and evenly distributed throughout the mixture.
- Place the saucepan over a double boiler, making sure the water does not come to a boil, and gently continue whisking the mixture for at least 10 minutes. Keep whisking until the mixture has doubled in volume and forms a smooth, velvety custard-like cream.
