Creamy Pumpkin Purée

Potatoes 400g
Whole Milk 150g
Ground Cinnamon 1 tsp
Extra Virgin Olive Oil 15g

Instructions:

  1. Prepare the pumpkin: Begin by cleaning the pumpkin to obtain 700g of flesh. Slice it into wedges, remove the skin, and cut it into small cubes.

  2. Prepare the potatoes: Peel and chop the potatoes into small cubes, similar in size to the pumpkin pieces.

  3. Steam the vegetables: Place the pumpkin and potato cubes in a steamer basket. Set the basket over a pot of boiling water and cover with a lid. Allow the vegetables to steam for approximately 40 minutes. To ensure they are cooked through, use a fork to check their tenderness.

  4. Mash the vegetables: Once the pumpkin and potatoes are soft, transfer them to a potato masher and mash until smooth and creamy.

  5. Combine ingredients: Transfer the mashed vegetables into a saucepan. Add the olive oil and milk. Sprinkle in the cinnamon, salt, and pepper.

  6. Cook the purée: Place the saucepan over low heat. Stir with a whisk for a few minutes until the mixture is well combined and smooth.
