Tempeh in Coconut Milk (Tempe Masak Santan)

Ingredients

Ingredient Quantity
Tempeh (tempe) 2 blocks
Garlic cloves To taste (approx. 5 cloves)
Shallots (or red onions) To taste (approx. 5 shallots)
Red chilies 1 oz (approx. 100g)
Ground turmeric A small amount
Lemongrass stalks 2 stalks, slightly bruised
Coarse salt To taste
Ajinomoto (or other seasoning like Royco) To taste
Coconut milk (Kara or packaged) 1 pack (approx. 200 ml)
Water As needed

Instructions

  1. Prepare the Tempeh
    Begin by cutting the tempeh into your preferred size. Whether you like it cubed or sliced, choose a size that works best for you.

  2. Grind the Spices
    In a mortar or blender, grind together the red chilies, garlic cloves, and shallots. You can adjust the texture to your preferenceโ€”either finely ground or slightly coarse. Add a pinch of coarse salt during the grinding process to enhance the flavors.

  3. Sautรฉ the Spice Mixture
    Heat a little oil in a pan. Add the ground spice mixture, the bruised lemongrass stalks, and a pinch of ground turmeric. Sautรฉ the mixture over medium heat until it becomes fragrant and the raw spice aroma dissipates.

  4. Add the Tempeh
    Once the spices are aromatic, add the tempeh to the pan. Stir to combine the tempeh with the spice mixture, ensuring that itโ€™s evenly coated.

  5. Simmer with Coconut Milk and Water
    Pour in some water and the coconut milk. Stir well to blend the coconut milk with the other ingredients. Allow the dish to come to a gentle boil. Once boiling, taste the broth. If it needs more flavor, add more salt or seasoning (such as Ajinomoto or Royco) to suit your taste.

  6. Cook Until Done
    Continue cooking until the tempeh has absorbed the flavors, and the coconut milk has thickened slightly. Ensure the tempeh is fully cooked and the sauce has a rich, flavorful consistency.

  7. Serve
