Prepare the Tempeh
Begin by cutting the tempeh into your preferred size. Whether you like it cubed or sliced, choose a size that works best for you. -
Grind the Spices
In a mortar or blender, grind together the red chilies, garlic cloves, and shallots. You can adjust the texture to your preferenceโeither finely ground or slightly coarse. Add a pinch of coarse salt during the grinding process to enhance the flavors. -
Sautรฉ the Spice Mixture
Heat a little oil in a pan. Add the ground spice mixture, the bruised lemongrass stalks, and a pinch of ground turmeric. Sautรฉ the mixture over medium heat until it becomes fragrant and the raw spice aroma dissipates. -
Add the Tempeh
