Tongkol Kuah Santan Recipe

Discover the rich and comforting flavors of Tongkol Kuah Santan, a beloved Indonesian dish featuring tender pieces of tongkol fish simmered in a luscious coconut milk broth. This hearty dish is perfect for a cozy family meal or a special gathering. Here’s how to make it:

Ingredients:

  • 1 kg tongkol (cut into pieces and lightly fried)
  • 4 pieces white tofu (cubed)
  • 200 cc coconut milk
  • 1 large onion (sliced)
  • 5 green belimbing sayur (cut in half)
  • 3 tomatoes (quartered)
  • Ginger (smashed)
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 5 green chilies (sliced)
  • 1 bunch basil leaves

For the Spice Paste:

  • 4 shallots
  • 3 garlic cloves
  • 7 red chilies
  • 5 bird’s eye chilies
  • A pinch of coriander seeds
  • Salt, sugar, and seasoning powder to taste

Instructions:

  1. Prepare the Spice Paste:

    • Blend the shallots, garlic, red chilies, bird’s eye chilies, and coriander seeds into a smooth paste.
  2. Cook the Aromatics:

    • In a large pot, heat a little oil over medium heat. Add the spice paste along with the smashed ginger, kaffir lime leaves, and bay leaves. Sauté until fragrant and the paste begins to separate from the oil.
  3. Simmer the Broth:

    • Pour in 1 cup of water and bring to a boil. Once boiling, add the pre-fried tongkol pieces. Stir occasionally and let it cook for a few minutes.
  4. Add the Coconut Milk and Vegetables:

    • Pour in the coconut milk and add the tofu cubes, green belimbing sayur, green chilies, sliced onion, and tomatoes. Stir gently to combine.
  5. Season the Dish:

    • Season with salt, sugar, and seasoning powder according to your taste. Let the dish simmer until the vegetables are tender and the flavors meld together, about 10-15 minutes.
  6. Finish with Basil:

    • Just before serving, add the fresh basil leaves and stir them in. Allow the dish to simmer for a few more minutes to infuse the basil flavor.
  7. Serve:

    • Remove from heat and serve hot. Enjoy your delicious Tongkol Kuah Santan with steamed rice or as part of a larger meal.
