Prepare the Coffee
Begin by brewing a rich coffee using your moka pot. Once brewed, set it aside and allow it to cool completely. -
Whisk the Cream
Pour the heavy cream into a mixing bowl. Add the honey and begin whisking the mixture. Stop whisking once the cream starts to thicken but is not yet fully whipped. -
Divide the Mixture
Once the cream is slightly thickened, divide the mixture into two separate bowls. In one bowl, place approximately 250g of the cream, and in the other bowl, place about 450g. -
Add Coffee to One Bowl
In the larger portion of cream (450g), pour the cooled coffee and gently mix it with a whisk until well combined. -
Prepare the Chocolate
Using a vegetable peeler, carefully shave the dark chocolate to create delicate chocolate flakes. Set aside. -
Assemble the Gelato
Take an ice lolly mold and begin layering the cream and coffee mixture in each section. Alternate the two types of cream (coffee-flavored and plain), filling each section of the mold as you go. -
Freeze the Gelato
Once the molds are filled, gently remove any excess air by tapping the mold. Place the molds into the freezer and allow the gelato to freeze thoroughly. -
Serve and Garnish
When ready to serve, carefully remove the gelato from the molds. Place the gelato on a tray and return it to the freezer for a moment while you prepare the chocolate.Roughly chop the remaining dark chocolate and melt it using either a double boiler or microwave. Once melted, drizzle the warm chocolate over each ice lolly.
