This Jiffy Corn Soup is perfect for those busy days when you need something quick, comforting, and delicious. It’s a hearty soup that’s bursting with flavor and can be whipped up in no time. Plus, it’s packed with wholesome ingredients like corn, garlic, tomatoes, and oregano, making it both nutritious and satisfying.

Ingredients
- 2 cans of whole corn
- 2 cloves of garlic
- 1/2 teaspoon salt
- 50g butter
- 1 can of chopped tomatoes
- 5g dried oregano
- 1 cup vegetable stock
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare Corn Puree:
- Process one can of corn in a food processor until smooth. Set aside.
- Prepare Garlic Paste:
- In a small bowl, combine the garlic cloves with salt, and mash into a paste. Set aside.
- Cook Garlic Paste:
- In a large saucepan, melt the butter over medium heat.
- Add the garlic paste and cook, stirring occasionally, until soft and fragrant.
- Add Tomatoes:
- Pour in the can of chopped tomatoes and simmer gently for approximately five minutes, allowing the flavors to meld together.
- Combine Ingredients:
- Add the vegetable stock, dried oregano, pureed corn (from step 1), and the remaining whole corn kernels (from the second can) into the saucepan.
- Bring to a Boil:
- Increase the heat and bring the soup to a gentle boil.
- Simmer:
- Reduce the heat to low and let the soup simmer for 20-30 minutes, allowing the flavors to develop and the soup to thicken to your desired consistency.
- Season to Taste:
- Season the soup with salt and freshly ground black pepper, adjusting to your preference.
- Serve:
- Ladle the hot Jiffy Corn Soup into bowls and garnish with a sprinkle of fresh herbs or a dollop of sour cream, if desired.
