Curd (Dahi / Yogurt) – beaten to smooth consistency 1-1/2 cups
Ginger (finely chopped) 1 inch piece
Green Chilli (finely chopped) 1

Sunflower Oil 1 teaspoon
Chana dal (Bengal Gram Dal) 1/2 teaspoon
Mustard Seeds 1/2 teaspoon
Curry Leaves 1 sprig
Asafoetida (Hing) A pinch

Instructions

  1. Cook the Oats:

    • In a saucepan, bring 1 cup of water to a rolling boil.
    • Add 3 tablespoons of instant oats and season with a pinch of salt. Stir well, and let the oats simmer on low heat for about 3 minutes until fully cooked and soft.
    • Once done, turn off the heat and let the oats cool to room temperature.
  2. Prepare the Curd Mixture:

    • Take a bowl and add 1-1/2 cups of curd (yogurt). Whisk the curd until it reaches a silky smooth consistency.
    • To the beaten curd, add the finely chopped ginger, green chilli, and the cooled oats. Mix everything together thoroughly. If the consistency is too thick, add a small amount of milk or water to adjust it to your preference.
  3. Prepare the Tadka (Tempering):

    • In a small tadka pan, heat 1 teaspoon of sunflower oil on low heat.
    • Once the oil is hot, add 1/2 teaspoon of chana dal and 1/2 teaspoon of mustard seeds. Let them splutter and crackle.
    • After the mustard seeds have spluttered, add a sprig of curry leaves and a pinch of asafoetida (hing). Once the curry leaves start to crackle, turn off the heat.
  4. Assemble the Curd Oats:

    • Pour the prepared tadka over the curd oats mixture and mix well to ensure the flavors are evenly distributed.
    • Taste and adjust salt, if necessary, and mix again.
