Curried Pasta Salad Recipe

Ingredients:

  • 1 cup small shell pasta
  • 1/3 Red Delicious apple, diced
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 cup mayonnaise
  • 3/4 cup sour cream
  • 3/4 teaspoon curry powder
  • 1-3 leaves iceberg lettuce
  • Paprika, for garnish

Instructions:

  1. Cook the Pasta:

    • Cook the small shell pasta according to the package directions. Drain and set aside to cool.
  2. Prepare the Salad Base:

    • Transfer the cooked pasta to a large mixing bowl.
  3. Add Fresh Ingredients:

    • Add diced Red Delicious apple, diced cucumber, and finely chopped red onion to the pasta in the bowl. Mix well to combine.
  4. Prepare the Curry Dressing:

    • In a separate small bowl, combine mayonnaise, sour cream, and curry powder. Adjust the amount of curry powder to taste, keeping in mind you can use less for a lighter dressing.
  5. Combine and Chill:

    • Gently fold the curry dressing into the pasta and vegetable mixture until everything is evenly coated. Reserve a portion of the dressing if you prefer a lighter salad.
    • Cover the bowl and refrigerate the salad for several hours to allow the flavors to meld.
  6. Serve:

    • To serve, line a glass salad bowl with iceberg lettuce leaves.
    • Spoon the chilled curried pasta salad onto the lettuce-lined bowl.
    • Garnish with a sprinkle of paprika for added flavor and visual appeal.
  7. Note:

    • If mixing in a plastic bowl, be cautious as curry powder may stain the container.
