Ingredients:

  • 10 slices of bacon
  • 2 onions, diced
  • 1 tablespoon curry powder
  • 4 white potatoes, peeled and diced
  • 4 bay leaves
  • 4 cups kale leaves, chopped
  • 2 cups milk
  • 4 cups half-and-half
  • 5 cups clam juice
  • 1 tablespoon dried thyme
  • 1 pound fresh fish fillets, cut into bite-sized pieces
  • Salt and pepper to taste

Instructions:

Step Description
1 On medium-high heat, cook bacon in a large saucepan for 5 minutes.
2 Add onions and cook until onions are translucent.
3 Add curry powder, continuing to cook and stir for about 30 seconds.
4 Add clam juice, potatoes, and bay leaves. Cook and simmer for 5 minutes.
5 Add chopped kale and simmer until vegetables are almost tender.
6 Pour in milk, half and half, and add thyme. Continue to cook until simmering.
7 Add fish and continue cooking until fish are cooked through.
8 Add salt and pepper to taste.
9 Discard bay leaves.
10 Ladle into soup bowls and serve hot.
