Ingredients:

Instructions:

    • Stir the vinegar or lemon juice into the milk.
    • Bring the mixture to a near boil (around 200ยฐF) in a bowl set in a saucepan of water.
    • Remove from heat and keep it in a warm place for 4 to 5 hours.
  4. Straining:

    • Pour the mixture into a sieve lined with the scalded clean cloth.
    • After an hour, place a plate on top to weight and encourage the whey to drip through.
    • The curds in the cloth are the cheese (Quark).
  5. Storage:

    • Cover and store the Quark in a cool pantry; it will keep for about a week.
  6. Optional Uses:

    • You can use the whey, flavored with fruit juice, as a beverage, or use it to make scones.
    • Store the whey in the refrigerator and use it within 2 days.
