Indulge in the creamy goodness of Dolce Latte, a sweet Italian treat that’s sure to captivate your taste buds. This delightful dessert combines rich ricotta, condensed milk, and fresh cream, all set to perfection with the delicate touch of orange zest. Whether you’re hosting a special gathering or simply craving a luxurious dessert, Dolce Latte is the perfect choice. This recipe will guide you through making this divine dessert that serves 6 and can be customized to your liking.

Ingredients:

Ingredient Quantity
Ricotta cheese (whole milk) 400g
Sweetened condensed milk 397g
Heavy cream 200ml
Gelatin sheets 2
Almond flour 150g
Powdered sugar 130g
Egg whites 1
Honey 1 teaspoon
Orange zest 1
Pinch of salt 1 pinch

Instructions:

  1. Prepare the Gelatin:

    • Start by softening the gelatin sheets. Place them in cold water and let them soak for about 10 minutes.
  2. Make the Ricotta Mixture:

    • Sift the ricotta into a large mixing bowl to avoid lumps.
    • Add the sweetened condensed milk to the ricotta, mixing well using a whisk until smooth.
  3. Dissolve the Gelatin:

    • Once the gelatin has softened, squeeze out the excess water. Melt the gelatin by dissolving it in a small amount of warmed heavy cream. Stir with a spoon until fully dissolved.
  4. Combine Mixtures:

    • Add the gelatin mixture to the ricotta and condensed milk mixture, stirring gently to combine. This will create a silky, smooth mixture.
  5. Assemble the Dessert:

    • Spoon the dessert mixture into six individual 125ml molds. You can use small dessert molds or cups.
    • Refrigerate the molds for 4-5 hours if you prefer a firmer, ice cream-like consistency. For a softer, creamier texture, refrigerate them for just 2 hours in the fridge.
  6. Prepare the Biscuit Base:

    • Grate the zest of one orange. In a mixing bowl, combine the orange zest with the sifted powdered sugar.
    • Add the egg white and stir well until a smooth batter forms.
    • On a clean surface, lay out a piece of parchment paper. Using a spoon, transfer the batter onto the paper, spreading it into a rectangular shape approximately 18×25 cm.
    • Place this sheet in a baking tray of a slightly larger size to allow it to spread evenly. Bake until crisp and golden.
  7. Shape the Biscuit:

    • Once the biscuit base is cool, cut it into 6 individual rounds, matching the size of your molds.
  8. Assemble the Dolce Latte:

    • To serve, place one biscuit round on a dessert plate.
    • To remove the Dolce Latte from the mold, dip the bottom of the mold in hot water for a few seconds to loosen it. Then, gently invert the mold onto the biscuit.
    • The creamy Dolce Latte will slide right onto the biscuit base.
  9. Garnish and Serve:

    • For a final touch, garnish with slivered almonds or any other topping you like. Serve chilled, and enjoy the indulgence!

Tips for the Perfect Dolce Latte:

  • Gelatin Substitute: If you’re looking for a vegetarian option, you can replace gelatin with agar-agar, a plant-based alternative.
  • Flavor Twist: Experiment by adding a hint of vanilla or a few drops of almond extract for a unique flavor profile.
  • Storage: This dessert can be stored in the fridge for up to 2 days, making it an excellent make-ahead option for dinner parties or gatherings.

Dolce Latte is a dessert that combines the creamy richness of ricotta and sweet condensed milk, complemented by the delicate crunch of almond flour and a hint of citrus from orange zest. It’s an ideal indulgence for those who appreciate the finer things in life, and its velvety texture will have you coming back for more. Enjoy this treat as a centerpiece at your next gathering or as a personal sweet escape after a long day.
