Instructions

  1. Prepare the Bottle Gourd:
    Begin by washing the bottle gourd thoroughly. Peel it, remove the seeds if necessary, and then cut it into round slices.

  2. Heat Oil:
    Heat 2 tablespoons of oil in a wok or deep pan on medium heat. Once the oil is hot, add 1 tablespoon of cumin seeds. Let them sizzle for about 15 seconds.

  3. Add Spices:
    Immediately add 1 teaspoon of turmeric powder, 1 tablespoon of red chili powder, and salt to taste. Stir well and cook the spices for about 2 to 3 minutes, allowing the flavors to meld together.

  4. Cook the Bottle Gourd:
    Now, add the sliced bottle gourd (Doodhi) to the pan. Mix everything thoroughly so the gourd is well coated with the spices. Cover the pan and let it cook for 4 to 5 minutes, allowing the gourd to soften.

  5. Add Milk:
    After 5 minutes, once the bottle gourd is tender, pour in half of the low-fat milk (1/2 litre). Stir to combine and cook for 3 minutes. The milk will start to thicken and blend with the spices.

  6. Final Cooking:
    Add the remaining milk to the curry, and let it cook for another 2 minutes. Stir occasionally to ensure the curry thickens evenly.

  7. Garnish:
    Once the curry has thickened to your desired consistency, turn off the heat. Garnish with finely chopped fresh coriander leaves for an added burst of flavor.

  8. Serving:
    Serve this delicious Doodh Dudhi with hot phulkas (Indian flatbreads) and a side of fresh Tomato Onion Cucumber Raita for a complete meal. Enjoy it as a part of your daily lunch!
