Old-Fashioned Banana Cream Pie 🥧

Description

Before Cool Whip and instant pudding, this was how a cream pie was made. If you leave out the bananas, you have vanilla cream pie. If you add 1 cup shredded coconut to milk as it’s being heated, you have coconut cream pie.

Ingredients

3 cups Milk
3/4 cup White sugar
1/3 cup All-purpose flour
1/4 tsp Salt
3 tbsp Butter
2 tsp Vanilla extract
3 Egg yolks
3 Bananas

Instructions

  1. Prepare Pie Shell: Have a baked 9-inch pie shell ready for use.

  2. Scald the Milk: In a large saucepan, scald the milk over medium heat. Be careful not to let it boil.

  3. Mix Dry Ingredients: In another saucepan, combine the sugar, flour, and salt.

  4. Gradually Stir in Milk: Gradually stir in the scalded milk into the dry ingredients mixture, stirring constantly to prevent lumps from forming.

  5. Cook until Thickened: Over medium heat, continue stirring constantly until the mixture thickens.

  6. Cover and Cook: Once thickened, cover the mixture and let it cook for an additional two minutes, stirring occasionally.

  7. Prepare Egg Yolks: In a small bowl, slightly beat the 3 egg yolks.

  8. Combine Egg Yolks with Mixture: Stir a small amount of the hot mixture into the beaten egg yolks. Once thoroughly combined, pour the egg yolk mixture back into the hot mixture in the saucepan.

  9. Continue Cooking: Cook the mixture for one minute longer, stirring constantly to ensure the eggs are fully incorporated.

  10. Blend in Butter and Vanilla: Remove the mixture from heat and blend in the butter and vanilla extract until fully combined.

  11. Let it Cool: Allow the mixture to cool until it reaches lukewarm temperature.

  12. Assemble Pie: Slice the bananas and scatter them evenly in the pre-baked pie shell.

  13. Pour Mixture Over Bananas: Once the mixture has cooled to lukewarm, pour it over the sliced bananas in the pie shell, ensuring even distribution.

  14. Optional Meringue: If desired, use the 3 leftover egg whites to make a meringue to top the pie. Alternatively, you can let the pie cool until serving.
