Egg Butter Masala Recipe

Egg Butter Masala is a rich, creamy, and spicy curry, much like the popular Paneer Butter Masala. This dish combines boiled eggs in a delicious, flavorful gravy made with tomatoes, onions, and a variety of aromatic spices. Cashews are added to the gravy, which enhance its creamy texture and taste. Perfect for home parties or potlucks, this dish is sure to be a crowd-pleaser.

Ingredients:

  • 4 Eggs
  • 2 Tomatoes, finely chopped
  • 2 Onions, chopped into bars
  • 6 Cloves Garlic
  • 1/4 inch Ginger
  • 6 tbsp Butter
  • 1 Bay Leaf
  • 1 tsp Red Chili Powder
  • 1 tbsp Garam Masala Powder
  • 1 tsp Kasuri Methi (dried fenugreek leaves)
  • 20 Cashews
  • 1 tbsp Ginger Garlic Paste
  • Salt, to taste

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Serves: 4-6

Instructions:

  1. Prepare the Cashews: Soak the cashews in hot water for about 30 minutes. Once soaked, drain the water and set the cashews aside.

  2. Boil the Eggs: In a saucepan, boil the eggs in enough water. Once boiled, peel the eggs and set them aside.

  3. Cook the Gravy Base: Heat butter in a pan. Add the chopped onions and sauté until soft. Add the chopped tomatoes and cook until they become soft and mushy.

  4. Add Aromatics: Stir in the ginger-garlic paste and let it cook for 2 minutes. Then, add the soaked cashews to the mixture and cook for an additional 2 minutes. Remove the pan from heat, allow it to cool slightly, and then blend the mixture with 1 cup of water in a mixer grinder until smooth. Strain the gravy through a sieve, discarding the seeds.

  5. Prepare the Curry: In the same pan, heat butter again. Add a bay leaf and ginger-garlic paste, cooking for 1 minute. Then, add the strained tomato-onion mixture, stir, and cook for 10 minutes.

  6. Spice It Up: Add the red chili powder, garam masala powder, and kasuri methi to the pan. Stir well, then add the boiled eggs and cook for another 5 minutes, allowing the eggs to absorb the flavors.

  7. Final Touch: Garnish the Egg Butter Masala with fresh coriander leaves and drizzle some fresh cream on top for a rich finish.
