Instructions

  1. Cook the Masoor Dal
    Begin by thoroughly rinsing the masoor dal (red lentils) under running water. In a pressure cooker, add 1 1/2 cups of water along with the washed lentils. Close the lid and cook on medium heat for about 3 whistles. Once done, let the pressure release naturally. Open the cooker and gently mash the cooked dal with a spoon. Set the mashed dal aside for later.

  2. Prepare the Tempering
    In a pan or kadhai, heat 2 teaspoons of oil over medium heat. Once the oil is hot, add mustard seeds and curry leaves. Let them sizzle for about 15 seconds.

  3. Sautรฉ the Aromatics
    Add the chopped onions and sliced green chilies to the pan. Sautรฉ them for about 2 minutes until the onions become soft and translucent. Then, add the chopped tomatoes and cook them until they soften, about 3 to 4 minutes.

  4. Add Spices and Mint
    Once the tomatoes are soft, add the mint leaves and stir well. After about 30 seconds, add the turmeric powder, garam masala, and cumin powder. Stir the mixture well and cook for another 3 to 4 minutes, allowing the spices to release their flavors.

  5. Cook the Eggs
    Crack the eggs one by one and gently add them into the pan. Stir continuously to mix the eggs into the spices and allow them to cook. Keep stirring until the eggs are fully cooked and have absorbed the flavors of the spices.

  6. Combine with Mashed Dal
    Now, add the mashed dal to the pan along with a pinch of asafoetida (hing). Mix everything thoroughly to combine the eggs, spices, and dal. Let this mixture cook for 2-3 minutes so that the dal and eggs blend together.

  7. Simmer the Dal
    Add 1/2 cup of water to the dal mixture and stir well. Cover the pan and let it simmer for 5 minutes, allowing the flavors to meld together.

  8. Finish with Coconut Milk
    Finally, pour in the coconut milk and salt to taste. Stir well, and let the dal simmer for another 7 to 10 minutes until it thickens slightly and becomes creamy.

  9. Serve and Enjoy
