Ingredients:
- 2 Eggs
- 1/2 cup Masoor Dal (red lentils)
- 1/2 cup Coconut Milk (thick)
- 1 Onion, finely chopped
- 1 Tomato, finely chopped
- 3 Green Chilies, chopped
- 1/4 cup Mint Leaves, chopped
- 1 tsp Ginger-Garlic Paste
- 1/2 tsp Turmeric Powder
- 1 tsp Garam Masala Powder
- 1/4 tsp Cumin Powder
- A pinch of Hing (asafoetida)
- Salt to taste
- 1 tsp Mustard Seeds
- 6 Curry Leaves

Prepare Masoor Dal: Wash the masoor dal thoroughly. In a pressure cooker, add 1.5 cups of water and the dal. Close the lid and cook for 3 whistles. Let the pressure release naturally, then open the cooker and mash the dal. Set it aside.

Temper the Spices: In a pan, heat 2 tsp oil. Add mustard seeds and curry leaves. Sauté for about 15 seconds until they splutter.

Cook the Aromatics: Add chopped onions and green chilies to the pan, cooking them for 2 minutes until they soften. Add chopped tomatoes and cook until they turn soft.

Add Fresh Herbs and Spices: Once the tomatoes soften, stir in the mint leaves. After 30 seconds, add turmeric powder, garam masala powder, and cumin powder. Mix well and cook for 3-4 minutes to let the spices blend.

Add the Eggs: Break the eggs one by one into the pan, stirring gently until they are fully cooked and mixed with the spices.

Combine with Masoor Dal: Once the eggs are cooked, add the mashed dal and a pinch of hing. Stir well to combine everything.
