Ingredients:
- 8 slices Whole Wheat Brown Bread (edges trimmed)
- 3 Whole Eggs
- 4 tablespoons Classic Mayonnaise (with egg)
- 1 Cucumber, finely chopped
- 4 sprigs Coriander (Dhania) Leaves
- Salt and Pepper, to taste

Instructions:
- Heat a saucepan with a little oil. Crack the eggs directly into the pan and begin stirring with a wooden spatula as the pan heats up. Continue mixing to scramble the eggs. Season with salt and pepper while stirring.
- Once the eggs are scrambled, add the chopped cucumber, coriander leaves, and a generous tablespoon of Del Monte Egg Mayo. Mix well, ensuring the flavors are combined. Taste and adjust salt and seasoning as needed.
- Trim the edges off the bread slices and then cut each slice in half to create two rectangles.
- Spread the Egg Mayo mixture generously onto one slice of bread and top with another slice to form a sandwich. Repeat for the remaining bread slices.
