This creamy and delicious Egg Mayo Sandwich is a kid-friendly snack, perfect for breakfast or as an evening treat during the summer. Made with scrambled eggs tossed with herbs, finely chopped cucumber, and Del Monte’s Egg Mayo, it provides a high-protein, tasty option that kids will love.

Ingredients:

  • 8 slices Whole Wheat Brown Bread (edges trimmed)
  • 3 Whole Eggs
  • 4 tablespoons Classic Mayonnaise (with egg)
  • 1 Cucumber, finely chopped
  • 4 sprigs Coriander (Dhania) Leaves
  • Salt and Pepper, to taste

Preparation Time: 20 minutes
Cooking Time: 20 minutes

Instructions:

  1. Heat a saucepan with a little oil. Crack the eggs directly into the pan and begin stirring with a wooden spatula as the pan heats up. Continue mixing to scramble the eggs. Season with salt and pepper while stirring.
  2. Once the eggs are scrambled, add the chopped cucumber, coriander leaves, and a generous tablespoon of Del Monte Egg Mayo. Mix well, ensuring the flavors are combined. Taste and adjust salt and seasoning as needed.
  3. Trim the edges off the bread slices and then cut each slice in half to create two rectangles.
  4. Spread the Egg Mayo mixture generously onto one slice of bread and top with another slice to form a sandwich. Repeat for the remaining bread slices.
