Instructions

  1. Prep the Yam: Start by peeling the skin of the elephant yam and cutting it into small squares.
  2. Steam the Yam: Place the chopped yam in a pressure cooker with enough water to cover it. Cook until the cooker releases three whistles, ensuring the yam is tender.
  3. Make the Mixture: In a mixer, combine the steamed yam, chopped coriander leaves, green chilli, and ginger. Drain the excess water but reserve it for later. Grind the mixture until smooth.
  4. Temper the Spices: Heat sunflower oil in a tadka (tempering) pan. Add mustard seeds and allow them to crackle. Follow this with black urad dal and asafoetida, frying until golden brown.
  5. Combine: In a bowl, mix the ground yam mixture with yogurt and a bit of the reserved water to achieve your desired consistency. Stir until well combined.
  6. Serve: Pour the tempering over the raita and give it a gentle mix. Serve chilled or at room temperature alongside Mixed Vegetable Sambar, Cauliflower Thoran, and hot steamed rice.
